Pairing
Reds and cheese

Every red card lists one or two cheeses that suit it. My favourite: a Ribera such as Arzuaga with extra-aged Manchego and Gamonéu. Simple rule: the more structure and oak the wine has, the more aged the cheese; go carefully with very strong blues.
Some cheeses sold by Ametller Origen: Aged Manchego (Dehesa de los Llanos, approx. €9.02 for ~238 g), aged Idiazábal (200 g wedge, €6.99), Garrotxa (Bauma, approx. €8.44 for ~292 g) and aged Zamorano (Pago Los Vivales reserva, approx. €8.85 for ~300 g). Prices seen on 26/10/2026; affiliate links.
Every bottle, with its own song: blues, jazz, classical and opera to go with each wine.
