Tasting notes

Only made in exceptional years, from 80–100-year-old vines on the Cima Corgo's schist terraces. According to Bodeboca: grapes foot-trodden in granite lagares, 2 years in large vats; dark purple, black fruit and subtle spice; perfect balance, firm tannins and a sweet, lasting finish; it will evolve for decades. 19.5% ABV.

Pairing

Toasted walnuts and hazelnuts, chocolate and black-fruit desserts.

Cheese: Stilton and other blue cheeses, such as Cabrales
