France · AOC Chablis Premier Cru (Burgundy, France)
Billaud-Simon Chablis 1er Cru Les Vaillons
Domaine Billaud-Simon · 100 % Chardonnay
Tasting notes
A Chablis house founded in 1815. According to the winery: very stony clay-limestone soils over Kimmeridgian subsoil, fermentation with native yeasts and 14–16 months in steel tanks. In the glass, ripe citrus and white flowers; round on the palate, with a lively attack, freshness and a long finish.
Pairing
Oysters and shellfish, scallops, grilled fish, fresh goat's cheeses.
