A dry oloroso from González Byass with at least 8 years in American oak butts through the criadera and solera system. According to Bodeboca: golden amber; walnut and other nuts, toast, balsamic notes, truffle and leather; savoury, structured and long, with a touch of vanilla. 18% ABV. Vivino: 3.7.

Pairing

Red meat and game, stews such as oxtail or pork cheeks, mushrooms and well-aged cheeses.

Cheese: Extra-aged Manchego and aged Payoyo
